English muffin
INGREDIENTS :
250 gr rice flour
50 g of corn starch
125 gr sugar
5 gr instant yeast
1/2 teaspoon salt
400 ml coconut milk 1/2 grated coconut
Dye cake / meal red
Coconut milk:
250 ml coconut milk from coconuts 1/2
Salt to taste
HOW TO MAKE :
1. Combine flour, rice, corn, sugar, yeast, and salt. Stir well. Pour the coconut milk and stir until the dough is smooth. Give red coloring, stirring until evenly color. +/- Let stand 1 hour.
2. Heat the pancake mold, then pour +/- 25 ml of the batter into it. Cover the mold and cook until cooked and holes, lift. Serve with coconut milk.
3. To make coconut milk sauce: cook the coconut milk and salt over low heat, stirring constantly so as not to break the coconut milk.
For: 4 servings.
